Daphne Lambert
Daphne worked as a chef in France, Switzerland, America and London before taking over the kitchen at Penrhos. Her kitchen has won many awards, it was the first restaurant to be certified by the Soil Association and won The You magazine Organic Restaurant of the Year Award in 2002. In 1989, with Martin Griffiths, she converted part of Penrhos into a 15 bedroom hotel. This, together with the rest of the Penrhos project, won in 2000 a millennium marque award.
Daphne became fascinated by the connection between the food we eat and our health and twelve years ago studied and qualified as a medicinal nutritionist at The British School of Medicinal Nutrition. She is a food writer and a member of the Guild of Food Writers. Daphne co-authored 'The Baby & Toddler Cookbook', published in May 2000 and is the author of 'Little Red Gooseberries' published in June 2001. She is a freelance demonstrator and teacher. Daphne founded Greencuisine Ltd in 1995 to teach the importance of organic unrefined foods for optimum health. Greencuisine now runs a variety of residential courses and retreats which use a variety of naturopathic treatments to improve health and heal. Daphne is a member of the McCarrison Society and a Trustee of the Soil Association.

Dr. Kim A. Jobst MA. DM. MRCP. MFHom.
Kim is a physician and medical homoeopath and specialist in neuro-degeneration and dementia. Throughout his adult life he has had a great interest in what makes people ill, what disease means to them and how they might be encouraged and helped to heal. He has always had an interest in different forms and traditions of medicine. Kim has authored numerous academic papers and articles, as well as book chapters and has served as a consultant to industry for a number of years. He has lectured all over the world. Kim trained in Homoeopathy, Traditional Chinese acupuncture and Jungian analytical psychology and has a passionate interest in diet and nutrition. He shares an extraordinary depth of knowledge and understanding of health with all those he works with. He is visiting Professor in Healthcare and Integrated Medicine at Oxford Brookes University, Editor-in-Chief of the peer reviewed, scientific Journal of Alternative and Complementary Medicine: Research on Paradigm, Practice and Policy, and he was a founding member of the Council of His Royal Highness The Prince of Wales's Foundation for Integrated Health. Kim and his wife Belinda and four children live in Herefordshire.

Belinda Jobst
Belinda qualified as a midwife in 1979 having already completed a training in general nursing. She became passionately interested in the way babies are born, how invasive the hospital environment is at times and how this affects the birth outcome. She worked as a community midwife in London and Oxford with responsibility for births both in hospital and at home.
Her desire to help women have a positive birth experience led her to explore ways that would prepare mothers-to-be for a natural birth. She trained as an Active Birth teacher at the International Centre for Active Birth in London in 1989. This training centered on yoga-based exercise for women and preparation for natural birth. This is when her involvement with yoga started and it has become a central focus in her life. She taught yoga to ante-natal and post-natal women in Glasgow where she lived for 5 years. She lives in Hereford with her husband and 4 children where she is continuing to explore and develop her yoga practice. She regularly teaches yoga at Greencuisine

Jenni Durben
Jenni is a holistic therapist trained in counselling, emotional healing, Bowen technique, massage and aromatherapy. She works with people either one to one or in a group. During the last 12 years she has spent time visiting and treating people in hospital and old people's homes in the Herefordshire area. She is particularly skilled at helping people under stress and those with mental illness. She has worked at Greencuisine for 3 years.

Sue Pembrey
Sue is an experienced nurse, especially interested in natural choices for women to maintain health. This interest has been heightened by Sue's experience of breast cancer which has led her more deeply into healing.
