Autumn
September 26th - 28th
Autumn is the time of completion of the life cycle.
The harvest is gathered, the reserves are stocked up, the sense of loss becomes apparent as the light fade and chilly weather sets in.
The energy of change is moving inwards, contracting, pulling in, and dying back.
The sap is sinking into the roots.
Menus are created around the abundant leaves, roots, seeds and grains that autumn provides. We will spend time wild gathering the fruits of autumn. Whilst it is a time of great abundance it is also a time of preparation for the more dormant winter period.
Foods to build our menus around include, tofu, millet, mushrooms, pumpkins, rice, oily fish, pears, apples and grapes.

• Methods of preserving food; flavoured vinegars, syrups, pickles from wild gathered and from local harvest
• The incredible health benefits of fermented and live culture foods such as sauerkraut, kimchee and kefir
• Dehydration is one of the oldest ways of preserving food. Nutrient rich fruits and vegetables. Delicious crackers and biscuits, like linseed & carrot crackers, date, orange & coconut biscuits
• The benefits of eating seaweed on health and wellbeing. Learn to create dishes such as soups, sushi & relishes

This weekend covers two seasons, late summer and autumn.
Late summer is the time when all in nature is in the state of almost ripened.
• Spleen/Pancreas/Stomach organ network as influenced by the late summer
• Spleen is an essential organ for the production of both Qi (vital energy) and Blood
• Maintains adaptability, equilibrium, sense of mental and physical orientation
• Spleen is said to give the power to thought, influences our capacity for thinking, studying, concentrating, focusing, memorising
